Ingredients:
1 large onion
Salt, pepper and turmeric powder to taste
2 tablespoons tomato paste
100 grams chickpeas
150 grams garbanzo beans
300 grams dried plums
200 grams Persian pottage pasta (also known as "reshteh" you can get this from Persian grocery stores)
Vegetable oil for frying
How to:
Soak the beans in separate containers in cold water overnight, making sure to change the water at least once during the soaking process. Fry diced onions in a generous amount of vegetable oil until crispy and golden. Add tomato paste and continue sautéing for a few more minutes. Drain the beans and add them to the pot. Stir for a few minutes. Add 5 cups of water and bring to a boil. Lower the heat and cover the pot with the lid and cook for two hours until the beans are completely cooked. Soak the dried plums in hot water for ten minutes, drain and add to the pot. Add the pasta and simmer for 15-20 minutes until the pasta softens and the mixture thickens considerably. Remove from heat and serve in a big crystal punch bowl.
